A Bit O'Green
I've talked about my friend Sheryl before, she's the one who is a really good cook. Baking is definitely her "thing" and I so appreciate that she brings me holiday cakes and cookies every so often!
Last Wednesday night after church choir practice, Sheryl brought a cake to share with all of us. It was her green Watergate cake, which I am quite fond of!
Every year, I tell her that I love the cake and I need to get the recipe.
WELL!
This time, she really hooked me up.
On Sunday, not only did she give me the handwritten recipe, she gave me the cake mix AND the pudding mix AND the Dream Whip AND half a bottle of Club Soda!!
I mean, how sweet is that?
I had no excuses, I made the cake as soon as I got home.
If I have to choose between cake and pie, I usually choose pie. But, I do like chocolate cake and jello cake! This cake is right up there with jello cake.
I didn't realize that I like pistachio pudding until I made the frosting.
I could have eaten that all by itself!
I had heard of Watergate salad before but not Watergate cake.
While my cake was baking, I poked around on the internet to find out more about how this cake got it's name. Apparently it became popular around the time of the Watergate scandal and the development of pistachio pudding. Some of the recipes online call the frosting "cover up icing" haha!

My cake turned out so good and just in time for St. Patty's Day. I think Sheryl would approve.
Here is the recipe, according to Sheryl!
Watergate Cake
Preheat oven 350 degrees
1 White Cake Mix
1 cup oil
1 cup Club Soda
1/2 cup chopped pecans
1 pkg Instant Pistachio Pudding
6 drops green food coloring
3 extra large eggs
Mix all ingredients except eggs. Add eggs one at a time and beat well after each one. Spread evenly in a greased and floured 11" x 17" pan.
(I used a 9" x 13" pan)
Bake for 25 minutes and test for doneness with a toothpick.
(The 9" x 13" pan took longer to bake, closer to 40 minutes) Cool cake completely.
Frosting
1 pkg Dream Whip
1 pkg Instant Pistachio Pudding
1 1/2 cups milk
6 drops green food coloring
Beat all ingredients together until stiff and spread on cake. Refrigerate.
