Apricot Almond Cake

 





I've been enjoying trying out some new cake recipies. This apricot almond cake was such a treat! There are some apricot trees down the street and I always want to pick them when I see the apricots ripening. The other morning while I was out for my morning walk, an older couple had just pulled up to the spot in their truck and unloaded a ladder. They had their ice cream buckets ready to fill with the tiny fruits. By the time I walked past again, they had them picked! I stopped at the store later to see if there were any apricots yet and I did find some. I bet this cake would be good with other fruits like peaches or plums.

Apricot Almond Cake from "Simple French Baking"

3 1/2 oz salted butter

1 1/2 cups all purpose flour

3 eggs

3/4 cup brown sugar

1 tsp vanilla

a pinch of salt

1 tsp baking powder

1 cup ground almonds

1/3 cup Greek yogurt

1/2 cup vegetable oil

8-10 apricots, pitted

 1. Preheat oven to 350°. Grease and flour a 9 inch cake pan

2. In a mixing bowl, combine the eggs, sugar, vanilla and salt. Add the butter, half the flour, the baking powder and ground almonds, then stir in the yogurt and the rest of the flour. Whisk in the oil.

3. Dice half of the apricots and thinly slice the rest to put on top. Add the diced apricots to the batter. 

4. Pour the batter into the cake pan and cover with the apricot slices. Sprinkle the top with sugar and cook for 40-45 minutes.

  1. Someone gave us a bunch of plums last month. I tried an upside down plum cake that was delicious!
